Biscoff Crunchy Rolls
Experience your pancakes with some crunch!
- 250g flour
- 10g baking powder
- 5g cinnamon
- 2 eggs
- 250ml milk
- 250ml water
- 25ml sunflower oil
- 1 tbsp lemon juice
- butter for baking
- 140g Biscoff Crunchy Spread
- 2 Biscoff biscuits

Sift the flour, baking powder and cinnamon together in a large mixing bowl.

In a separate bowl, mix together the eggs, milk, water, sunflower oil and lemon juice.

Add the liquids to the dry ingredients and mix well with a whisk.

Allow to rest for 30 minutes.

Heat a knob of butter in a frying pan and spoon in a twelfth of the batter, making sure the mixture is equally distributed.

Cook each pancake for 2 minutes over a medium heat until the top is dry and the bottom is golden brown. Flip the pancake and cook for a further minute.

Cover one side of each pancake with Biscoff Crunchy Spread and roll like a spring roll.

Stack the pancakes and top with hot Biscoff Crunchy Spread (heat for 30 seconds in the microwave) and crumbled Biscoff biscuits.
